beet raspberry smoothie

A smoothie with a super energizing taste and colour; nothing like a bright pink smoothie to start your day off right.  Raw beets and raspberries give this smoothie it’s vivid colour.

The addition of beets give a slightly earthy taste, with a sweet citrus undertone from the raspberries and lemon juice.  Avocado adds to the fat content of this smoothie, but not to worry, only healthy unsaturated fats here. (as well as B and K vitamins)  The other source of fat in this smoothie comes from the ground flaxseeds, which are an excellent source of omega-3 fatty acids, a nutrient that protects against inflammation.

The vegetables in this smoothie bump it up to contain 17 grams of fibre per serving, and it also gives you 90% of your vitamin-C for the day.

Yields: 2 servings

Ingredients:

  • 1 beet, peeled and chopped
  • 1 apple, cored and chopped
  • 1 lemon, juiced
  • 1 cup frozen raspberries
  • 2 stalks celery, chopped
  • 2 tbsp ground flaxseed
  • 1/2 avocado
  • 4 ice cubes
  • 1 cup water

Directions:

1. Place all the ingredients in a high-powered blender and blend until smooth.  Adjust amount of water to desired consistency.
